cheesy steak sandwich with pesto

A good sandwich, properly made, will always warms your heart, just like a good soup does. This is my favourite, which i’m very passionate of, of all the other sandwich i made or tasted. It basically involves getting a long submarine or baguette, slicing it midway in half just enough to open it up for you to stuff all the other ingredients.

Then get yourself those strips of beef steak or a nice piece of rib-eye, tenderloin or sirloin, as thin possible, and pound them mercilessly with a rolling pin until their tender. Season with salt and pepper and lay in a very hot griddle pan. Obviously you can cook to your liking but i like mine medium rare. Once the steak is nicely seared, splash a bit of balsamic vinegar on both side, and immediately grate some Parmesan cheese over the top so it melts from the heat and mixed with the juices. Stuff the meat into your baguette, together with rocket/arugula, thin slices of onion(yellow or white), and lined with a good quality cheddar slices. Pour some of the cooking juices over the bread, drizzle some extra virgin olive oil, and spoon over some pesto as the finishing touch.
